Organic Manchego P.D.O. Cheese Soto del Marqués



Our cheeses are distribuited under the trademark SOTO DEL MARQUÉS. All of our cheeses are made with organic raw sheep´s milk under Manchego PDO guidelines.

  • Semi-Mature Cheese: this young Manchego Cheese has a ripening period of 3 months until it obtains its best mild flavour with a touch of grass and slightly tangy.
  • Mature Cheese: it has a ripening periodo of 6 months, with a rich aroma reminiscent of the sheep´s milk. Has an intese flavour with an acidity touch.
  • Aged Cheese: : it has a ripening period of 12 months, with a crumbly texture, an intense flavour due to its ripening and a round final taste with a hint of nut.

Our cheeses are available in full pieces of 2 kg or 3 kg and in different vacuum packed wedges under request.
